Bio: Ruby has always loved cooking and entertaining! She is a passionate foodie that loves sharing her love of culinary adventures with those around her. Ruby comes from a family that is all about communal eating and hosting large family gatherings, where good food and great conversations are the backbone of any meal. Ruby's mom has been a huge inspiration for her and how she learned to make traditional Indian food. Growing up, her mom made authentic Indian dishes and she's learned to master some of her mom's famous dishes along the way. Ruby believes that while she doesn't have any formal culinary cooking skills, her food can rival restaurant quality dishes. Ruby also enjoys fusing international flavors in her food and is delighted to bring modern Indian cuisine to travelers' lives while doing what she loves most, meeting people all over the globe!

The journey, in full
Cooking Class: Join your host Ruby Vas at her charming family home in Chicago to learn to cook a modern Indian fusion meal or traditional Indian meal from recipes that she has created herself and learned from her mother. Your hands-on Chicago cooking class will last about 2 hours during which you will learn to cook three dishes from scratch. Some of the Mexican-Indian fusion dishes you might learn to cook are paneer "quesadillas" with tandoori onions and "crack" crema (a jalapeno, cumin, and spiced sour cream sauce), Indian-spiced corn eloté (roasted corn on the cob with an Indian rub), curried cauliflower with chimichurri or basmati rice-stuffed poblanos, and mango lassi. Your meal will conclude with a dessert such as mango panna cotta. If you prefer a traditional Indian cooking class, please state your preference when making your booking. Your traditional Indian meal might include dishes such as shrimp or chicken biryani and raita, whole roasted tandoori style chicken or chicken curry and aloo gobhi, a spiced potato and cauliflower dish. Your traditional Indian meal will conclude with a dessert such as mango kulfi, traditional Indian ice-cream. Enjoy learning about the tips and techniques involved in Indian fusion (or traditional Indian) cooking before you sit down at the table to share the meal you helped prepare with your host Ruby.

Meeting & Pickup
This experience takes place at Ruby’s private residence in Chicago. The exact address will be provided after booking confirmation. Lunch classes begin at 11:00 AM. Dinner classes begin at 6:00 PM. Guests are responsible for arranging their own transportation.
