Host Bio: Bridget is an author, independent food consultant, and trainer in Anglo-Indian cuisine. She has authored 8 recipe books (a few have received prestigious awards as well) on Anglo-Indian cuisine, which is her area of expertise and she has gone through a lot of effort in reviving the old forgotten dishes of the British Raj era. Her recipe books are a means of preserving for posterity, the very authentic tastes and flavors of Colonial ‘Anglo’ India, besides recording for future generations, the unique heritage of the pioneers of Anglo-Indian cuisine. Anglo-Indian cuisine is a fusion of Western and Indian cuisine, it is both 'Anglo' and 'Indian' in nature with a distinct flavor, comfortably straddling both cultures. Apart from writing cooking books she also conducts workshops to train chefs on how to cook classic Anglo-Indian dishes, organizes food festivals and culinary events, helps restaurants revamp and reinvent their menus, and offers cooking classes to travelers and locals.
